  • 1 Large Mixing Bowl
  • 1 Silicone Wood Spatula
  • 1 Silicone Bread Loaf Mold
  • 1 Cooling Rack

Ingredients
  

  • 1 cup Almond Flour
  • ½ cup Spelt Flour
  • ¼ cup Extra Virgin Olive Oil Can substitute with melted butter or coconut oil
  • 3 Ripe Bananas
  • 2 Eggs
  • ½ cup Coconut Sugar
  • 1 tbsp Cinnamon
  • ½ tsp Baking Powder
  • 1 tsp Vanilla Extract
  • ½ tsp Salt
  • ¼ cup Shaved Almonds or walnuts
  • 1/4 cup Semi Sweet Chocolate Chips

Instructions
 

  • Preheat your oven to 350 degrees.
  • Grease a 9x5 inch loaf pan.
  • In the food processor, combine the bananas, eggs, vanilla, cinnamon, baking powder, coconut sugar and olive oil.
  • In a large bowl, combine the liquid mixture with the almond and spelt flour. do not over mix. Fold in the chocolate chips.
  • Pour the batter into the prepared loaf mold and smooth the top.
  • Top with shaved almonds or favorite toppings.
  • Bake uncovered for 40 minutes. Then, cover loosely with a sheet of foil and bake for an additional 10 minutes.
  • Remove from the oven and let cool on a wire rack for 1 hour before transferring to serving dish.

Notes

When preparing your banana bread batter, feel free to mix in a variety of delicious and nutritious ingredients to enhance the flavor and texture. Consider adding chocolate chips for a sweet touch, chopped walnuts for a bit of crunch, or shaved almonds (I prefer salted) for a subtle nutty flavor.
